CATERING SERVICES DEPARTMENT

Post A:         Head Cook x 1 Post (Fixed Term Contract)

 Qualifications and Experience

  • 5 Ordinary level passes including English.
  • A Diploma in Professional cookery.
  • Higher National Diploma or a Degree in Tourism and Hospitality Management will be an added advantage.
  • At least two (2) years proven history in Catering operations and supervision.

Duties and responsibilities

  • Taste all the dishes to ensure that all is in order before service.
  • Allocate duties to staff to various serving points.
  • Experiment with recipes and suggest new ingredients – menu balancing.
  • Hand over and take over to the other supervisor.
  • Stock control.
  • Sales reconciliation
  • Manage kitchen assets.
  • Check all exit and entrance points before knocking off for the day.
  • Interacting with clients.
  •  Preparing menus.
  • Overseeing the presentation and serving of the food.
  •  Attending to customer inquiries.
  •  Ensuring that food service is provided to the customer’s satisfaction.
  •  Plan menus and order supplies.
  •  Ensure compliance with Health and Safety Regulations at the shop floor level
  •  Supervising staff and attending to employee issues.

Post B:         Chef /Cook x 4 Post (Fixed Term Contract)

     Qualifications and Experience

  • 5 ordinary level passes including English.
  • National Certificate in Professional cookery. 
  • Class one in the related trade.
  • National Diploma in professional cookery will be an added advantage.
  • At least (2) years proven history in Catering operations.

Desired Attributes

The position requires a person who possesses the following attributes

  •  Good communication skills.
  • Must possess interpersonal skills and abilities.
  • Must be a team player.
  • Should be able to work under minimum supervision
  • Strong customer-service skills.
  • Ability to courteously deal with patrons and put their wishes first.
  • Understanding food, kitchen and personal hygiene.
  • Excellent organisational and time management.

Duties and responsibilities

  • Prepare ingredients for the shift, wash vegetables, season meat etc.
  • Prepare oven, utensils and grills for the shift.
  • Ensure compliance with all health and safety regulations
  • Handling of multiple orders at one time.
  • Ensure proper storage of food and detergents.
  • Sanitize and clean workstations and utensils.
  • Maintenance of reorder stock levels.
  • Serving prepared food items at the serving point.
  • Asset management.
  • Control stock and minimise wastage.
  • Check freshness of food before preparation.
  • Coordination and control of stock movement during and after service time
  • Tasting prepared food before service.
  • Do all the requisitions of food and non-food items for the work station.
  •  Practice laid down hand over and take over procedures
  • Any other duties as assigned by the supervisor.

Post C:         Waiter/Waitresses x 2 Post (Fixed Term Contract)

     Qualifications and Experience

  • 5 ordinary level passes
  • At least two years proven history in the Catering field.

Duties and responsibilities

  • Provide the perfect service to every customer, (student, staff or guest)
  • Ensure the customer feels important and welcome in the dining halls.
  • Ensure hot food is hot and cold food is cold.
  • Present menu, answer questions and make suggestions regarding food and other services.
  • Serve all customers, i.e. students, staff and guests, in an accommodating manner.
  • Maintain a clean and organised service area.
  • Comply with health and hygienic policies and procedures.
  • Practice laid down hand over and take over procedures.
  • Lock all exit and entrance point before knock off time.
  • Any other duties as assigned by the supervisor.

Post D:         Kitchen Porter X 2 Post (Fixed Term Contract)

Qualifications and Experience

  • 3 ordinary level passes
  • At least one year working experience in the related field will be an added advantage.

Desired Attributes

The position requires a person who possesses the following attributes

  •  Good communication skills
  • Must possess interpersonal skills and abilities
  • Must be a team player
  • Accommodating guest requirements
  • Self-driven
  • Ability to take criticism
  • Work under minimum supervision.

Duties and responsibilities

  • Carry out basic cleaning tasks as fast as possible.
  • Collect and wash pots and pans.
  • Clean crockery and cutlery ensuring food preparation areas are clean and ready.
  • Unload equipment and food items from delivery vehicles.
  • Sweep and mop floors at the beginning and end of shifts.
  • Be ready to clean up to avoid hindering operations.
  • Take out garbage.
  • Help with food preparation routines such as chopping and peeling vegetables and fruits when needed.
  • Maintain the bin area.
  • Any other duties as assigned by the supervisor.
